This Saison combines complex flavor and easy drinking. Primary fermented with a nordic yeast strain, and conditioned with wild Brettanomyces cultured from Brussels, this beer is dry, rustic, and pleasantly fruity. Using only pilsner malt and French Barbe Rouge hops, the bulk of the flavor comes from the yeast and bottle & keg conditioning with Brettanomyces. Add in a touch of pink peppercorns to boost the fruitiness of the yeast and you have one refreshing Saison.
Brewed and tended by David Coyne. He also drew the illustration for the labels. This Saison has floral, citrus, and lemon zest aromas with a dry and spritzy mouthfeel.
